Rainbow Carrot Hearty Stew Recipe

Hey Everyone! I’ve been getting such amazing feedback on my recipe/food posts on Instagram, (@HealingProperties) I decided to put up a recipe of my own! Stews are quite simple to make and some of the most cozy and comforting Fall/Winter foods out there- in my opinion. Note: If you are using canned tomatoes with salt, do not add your salt until after.  Stews need to be Thick, Yummy and Filling, so don’t worry too much about using exact amounts. If you think you added too many veggies, or simply prefer your stew less thick, add 1/2 cup water. For this recipe I used all Organic ingredients, I suggest using these for the amazing full flavour effect.


For this recipe you will need:

1/2 – 1 Cup of Organic Pearl Barley ( I always like to make extra, and have it ready in the fridge for another meal )

4 – 5 Organic Rainbow Medium-Sized Carrots

1 1/5 – 2 Organic Shallots

1/4 – 1/2 Organic Onion

3 – 4 Organic Celery Sticks

1 Organic Large Garlic Clove

3 – 5 Organic Medium Sized Potatoes

1 Teaspoon Organic Turmeric

Himalayan Salt ( or Dead Sea Salt )


1 – 2 Organic Bay Leaves

1 Can Organic Navy Beans (398 ml)

1 Can Organic Diced Tomatoes in Water (796 ml)

1 Can Organic Tomato Sauce (398 ml)




Step 1: Put 1/5 Cup of Barley, 1 Cup of Water in Pot over Medium Heat

Cut your Carrots, Celery, Shallots, Onions and Garlic ( I prefer my veggies a little bit bigger in a stew, and my garlic quite small )

Using a Medium-Large sized Pot, Start with a bit of Coconut or Extra Virgin Olive Oil (Add a bit of water every once in a while to avoid sticking/burning). Once pot is warm, add Carrots, Celery, Shallots, Onions and Garlic. Let Simmer 10 – 15 Mins. While that’s going, cut your potatoes.

SteStep 4p 4: After Simmering for 10 – 15 Mins, Add Potatoes, Turmeric, Bay Leaf, Thyme (In between steps add a little bit of water if you notice sticking)

Add Navy Beas, Diced Tomatoes, Tomato Sauce and Dill and Let  Cook for 10 Mins.

 Drain and wash Barley with Cold Water (We don’t want any additional starch in the stew) Add to Stew. Stir occasionally, After about 10 minutes, try out your “broth”. Add Salt and Pepper (Desired Amount). Let cook (30 mins. or until vegetables are soft, stirring occasionally)
